Executive Chef, Dino Knežević joins Group Executive Chef Werner Seebach to open YEZI Zagreb October 2023.
Located in art’otel Zagreb, YEZI offers guests a unique, modern-day tea house concept that unites traditional and innovative dim sum, mixology, tea, and European patisserie for a dining experience like no other.
Opening in October and overseen by distinguished London Group Executive Chef Werner Seebach, previously at Roka, Sushi Samba, and Chino Latino, the talented team of chefs include Executive Chef, Dino Knežević and global dim sum extraordinaire, Tian Hau Low. Awarded Gault & Millau’s Young Talent of the Year in 2021, Executive Chef Dino Knežević has previously excelled in roles at Nobilion Restaurant part of Ikador Hotel, restaurant Tač, and most recently Palace Elizabeth, Hvar. Knežević says, “I’m looking forward to delivering on the gastronomic ambitions for YEZI and opening one of the most anticipated restaurants in Zagreb this year. It’s exciting to be developing a concept that is a modern twist on traditions, culture and produce resulting in a distinctive offering for the capital.”
The chefs’ combined expertise in dramatic table execution, as well as an array of distinctive pan-Asian dishes ranging from the extensive list of dim sum (including “lobster, crab, prawn dumplings with yuzu butter and caviar,” “rainbow seafood dumplings” and “drunken chicken and prawn wonton”), to oven baked larger plates like “Croatian pork belly” and “Ishiyaki beef” will give guests a bold, memorable taste of unusual dishes.
Guests can continue their culinary experience throughout the tea house which will serve meticulously sourced teas from artisan farms across Japan, Taiwan, and Southeast Asia. The diverse selection includes herbal, white, black and Pu-erh teas as well as the unique Two Dragon’s and Pearl blooming tea, popularly hailed as ‘flower art tea.’ The extensive offering is complimented by the exquisite patisserie selection combining both Eastern and Western flavours and includes Pear and Earl Grey compote, Matcha and Yuzu Mousse, Popcorn Cube and a delectable macaron selection available to eat in and take away.
The bar will provide guests with an intimate setting to enjoy cocktails and bar plates. The cocktail menu is inspired by the Asian philosophy of the five elements; Wood, Fire, Earth, Metal and Water and each drink will captivate guests’ imaginations via their senses. Grounding flavours, earthy botanicals, and intriguing aromatics, embody the very sense of opulence with creations such as the Yezi Negroni, Zagreb Sling and Sea Salted Martinez and sharing cocktails including the Jasmine Tea Milk punch.
